The ramen is made using a chicken broth and a spicy miso tare. Toppings I’ve chosen are shiitake mushrooms, wood ear mushrooms, scallions, menma, egg and pork chashu.
The ramen is incomplete. It should be complete tomorrow but I couldn’t wait to try it so I made myself a bowl.
What is incomplete is the egg still needs to marinate, the pork belly needs to both marinate and chill. Otherwise it was already pretty good.
As always my main complaint with making ramen is that the amount of time and waiting you need upfront is very high but if you make a lot of servings the average time per bowl isn’t terrible.
A little light on the broth, but it sure does look nice. Kudos!

Looks great! I never tried making ramen from scratch but I love to pimp up the instant noodles I like with various things.
The marinated eggs are pretty easy to make but yeah, need forethought, which tends to become an issue for me. Really like them though. Rum works well with them.
Yeah I used to (and still do) do that. I have a cabinet filled with instant noodles. These days because I cook so often I don’t usually make instant noodles but it is a great emergency meal or for when I’m lazy or just craving it.
Making ramen from scratch can be a tedious process and even I don’t do it 100% from scratch since I am using store bought noodles. To justify the time, you pretty much have to make way more than a single portion for it to be “worth it” in my opinion. The good thing is a lot of the parts of ramen can last a long time in the fridge or freezer so you can make like 10 servings of ramen, freeze it, and then enjoy it whenever you want. I tend to eat it through the week though so I will keep most of the stuff in the fridge.
