As you eat it, if you find you have the big bubbles mainly in the centre I’d try some more stretch/fold first before extending proving time.
Thanks, yes I think I skipped a stretch and fold before putting it in the the banetton for proving.
My mouth is watering looking at those little crispy edges on top.
