Looks like dookie but it is the best soup I have ever made. Probably could have mushed up the lentils more for a better consistency but I was impatient. Can’t stress enough how delicious this is, asafoetida makes all the difference tbh.

Food from the subcontinent is amazing for veganism, you should check it out for sure! Since you like Dal Palak, you should try Dal Tadka, Dal Makhani (replace milk butter for coco butter, it’ll be amazing, anytime you need creme, milk, or butter in a recipe just use coconut version of it), and Mix Dal (mix all lentils in a heavenly curry)

Made more dal palak but this time I was lazy and tried to cook the entire thing in an instant pot. I also didn’t deseed my green chilis. Not only am I sweating profusely but sometimes I bite into a piece of ginger that wasn’t cooked enough. Still good though

You can make dal palak in one pot but just prepare a tampering in another one also never ever aad whole seeded green chilli, my grandma makes curry for like 7-8 people and then we she adds like one seeded chilli, if you’re making for yourself alone then only add like half a chilli at most.
