Decided to try the frozen tofu-method, it didn’t come out quite as chewy as I expected, but still very much an improvement so i’ll definitely keep doing tofu this way. The sauce is just a pre-made Oishi brand teriyaki sauce, with chopped garlic + ginger and some mirin.

Edit: also, before frying the tofu pieces I used soy sauce on them and covered with corn starch to get nice browning going on

I’ve only tried the freezer method a few times, and every time it’s been worse than just pressing extra firm tofu very well.

    Looks and sounds excellent, OP.

The freezer technique never turned out well for us. I’ve just stuck to using the super firm, and focusing more on the other parts of the bowl ie making my own sauce, throwing in some cabbage, topping with sesame etc

That looks tasty. I’d like to eat more tofu, but around here it’s considerably more expensive than most meat, and that’s assuming one can find any.

I can’t say that I have, but for all that I like cooking, that’s slightly more involved than what I’m looking for. I just don’t have that kind of available time on my hands.

If I manage to live long enough to retire, that (and cheese making) might be in the cards though.
