when I was back in Seattle 2009 ish there was a ban on gas kitchens…not an outright ban but the filtration system for the restaurant build out I was involved in was 100k alone, with filters to ba changes daily, weekly and monthly.

the next kitchen was a remodel that removed the entire gas kitchen and replaced it with electric.

Californians have been trying to get that, but federal law has so far limited the ability to do so
